🌈Kathmandu Restaurant II After 9 p.m., the city of Boulder gradually grows quiet, with only this Nepalese restaurant still glowing with warm light. 🍀A gentle bell chimes as the door opens, and the owner can be seen polishing a copper prayer wheel, while over twenty varieties of curry powder line the spice cabinet. ⭐The food here is excellent and very reasonably priced, especially the buffet. Beautiful artworks adorn the interior, creating a welcoming atmosphere. 🌈The spicy potato dish was truly impressive—small potatoes roasted with their skins until crispy, coated in masala sauce and green chili pieces, and served with a refreshing yogurt-mint sauce underneath. 🍞The spring rolls were also unusual—crispy rice paper wrappers filled with chickpea puree and fennel, dipped in tamarind sauce for a sweet and tangy layering of flavors. 🍄 Noticing my curiosity, the owner kindly brought over a small cup of masala tea, whose warmth from cardamom and ginger instantly dispelled the Colorado spring chill. #BoulderEats #NepaleseCuisine #Buffet
