Chicago’s New Fine‑Dining Obsession — Claudia
Went to Claudia’s official opening dinner last night — absolutely loved it! Two years ago, I backed Chef Trevor’s Kickstarter to open this restaurant. As a thank‑you, he hosted a preview dinner that already hinted at Claudia’s future direction. Some dishes have evolved — like the black cod and squab variations — while others remain beloved classics. I opted for the 15‑course chef’s counter menu (couldn’t post all photos due to limit!). It was incredibly filling — maybe choose a shorter menu unless you’re truly eager to taste everything. I predict one to two Michelin stars within 1–2 years — try it before the stars arrive! 🐌 Snail Tempura Styled like a snail’s trail through the forest — even the “soil” is made of truffle crumbs. Whimsical and delicious. 🎁 Snack Box Highlights: crispy potato cake with caviar and stingray‑wrapped foie gras terrine. The truffle madeleines and rice crackers were also delightful. 🦪 Oyster with Pop Rocks Yes, popping candy on top — playful and briny. The full menu also included squab, black cod, and pho‑inspired steak with beef cheek — too many standouts to list, but every dish was exceptional. 🍽️ Dining Setup The chef’s counter is glass‑enclosed — allowing a full view of the kitchen while keeping chefs and guests safe. A thoughtful pandemic‑era design that still feels intimate. The space once housed 42grams (Chef Jake’s restaurant). Trevor joked that Jake wasn’t thrilled about the redesign, but he shrugged it off with a “I don’t really care what he thinks” 😹. Despite a busy service, Chef Trevor checked in multiple times to ask about the meal and express gratitude — a talented chef with great warmth. 📅 Reservations via Tock only — no walk‑ins at the moment.
