White Ribbon Fish Tempura ππππ β Thin, crispy coating, fish soft like tofu, paired with radish purΓ©e. Smoked Bonito ππ β Skin crispy, meat tender with yuzu-onion topping, but smoke flavor faint. King Crab ππ β Loaded with crab roe, rich and savory, but meat was fibrous and not very sweet. π£ Sushi He talked about his shari (sushi rice) from the moment we sat down β loves it so much he put it in his bio. Grains are huge β at least twice the usual size. High acidity, firm texture. First two pieces were sticky and warm, but it got better. Otoro πππ β Soft, fatty, slightly sinewy β paired well with the rice. Akami πππ β Fresh and noticeably tangy, softer texture than usual. Yellowtail ππβ¨ β Fish was a bit cold but still fresh β would be fattier later in season. Sea Bream ππππ β Wasabi kick! Tender, crisp, super fresh. Salmon Roe ππ β Fun texture like undersea popping pearls, but lacking flavor. Mystery White Fish ππππ β Melt-in-your-mouth tender with a subtle straw-smoke note. Shinko ππ β Brined + smoked to reduce βfishiness,β acidity mild. Spanish Mackerel πππ β Also brined + smoked, higher salt-acid, rich fat.
