Every now and then I indulge in American-style Japanese cuisine β said to be one of Chicagoβs top-tier experiences. π₯ Strawberry Lapsang Old Fashioned πππ Non-alcoholic, with light tea and strawberry notes and a hint of savory umami. πΆ Appetizer Course βΆ Chawanmushi ππππ β Silky steamed egg with eel underneath, rich and smooth. β· Tuna Tartare with Caviar & Bottarga πππππ β DIY spread on toast, topped with mullet roe β decadent and delicious! β€οΈ βΈ Simmered Octopus, Scallop, Spanish Mackerel ππβ¨ β Octopus was okay, scallop heavy on lemon, mackerel buttery and tender π βΉ Unnamed Fish Tempura ππ β Sweet glaze, soft coating β very βAmerican Japanese.β π βΊ Monkfish Liver ππππ β Melts in your mouth, rich and balanced with yuzu vinegar. π β» Tilefish with Crispy Scales ππππ β Beautifully fried scales, fish itself fresh and delicate π β Truffle & Vinegared Rice ππππ β Generous truffle shavings over rice, aromatic and satisfying in one big bite! β€οΈβ€οΈ π£ Sushi Course The ginger was oddly powdery β worst Iβve had. Sushi rice was fine, seasoning moderate. βΆ Golden Eye Snapper with Bottarga ππβ¨ β Snapper flavor was overpowered by the roe. β· Shinko with Salted Egg Yolk ππππ β Sweet instead of traditional sour-salty, more approachable and tasty π βΈ Kawahagi with Liver Sauce ππππ β Delicate texture, rich sauce β lovely π βΉ Hairy Crab πππ β Soft meat, noticeable oceanic flavor. βΊ Uni πππ β Good but not exceptional. β» King Crab Hand Roll with Butter ππππ β Sweet, rich, buttery β loved it! β€οΈ βΌ Akami ππβ¨ β Jelly-like texture, freshness was okay. β½ Chutoro ππβ¨ β Almost as fatty as otoro, pickled mushrooms helped a bit but still rich. βΎ Shimofuri with Caviar & Parm πππ β Fatty but less flavorful, slightly chewy, Parmesan was an interesting twist π βΆβͺ Wagyu πππ β Tiny but intensely fatty and oily. βΆβΆ Eel Tamagoyaki ππ β Way too sweet, like dessert π π§ Dessert Uni Ice Cream with Toasted Rice ππβ¨ β Salty toasted rice gave it a βsalted milk tea ice creamβ vibe β interesting! π From an American-Japanese fusion perspective, itβs creative β but many dishes leaned too oily, as if fat equaled flavor, without standout seasoning.
