Chicago's Recent Favorite Steakhouse—Trino

The previously criticized Komo has finally closed down~ Taking its place is Trino, a new steakhouse by chef Stephen Sandoval (formerly of Entre Sueños/Diego), reportedly blending Argentine X Spanish X Northern Mexican X Chicago styles—sounded like too many elements initially, so expectations were low, but it surprisingly became my recent favorite steak spot! 🔥 🥩 Image 2 shows seasoned raw oysters. Topped with cheese and flame-grilled tableside—I found them absolutely delicious (though my friend preferred the unseasoned version in Image 5). 🦪 🥩 Image 3 features Hawaiian bread—fragrant and soft. The menu's fried focaccia with burrata cheese looked amazing too, but unfortunately contained coriander seeds, so I didn't dare try it. 🍞 🥩 Image 4 is crab and dill tostada. The green color comes from pistachio sauce, with added pear and chili—beautifully unified in both color and sweet-crisp texture. 🌮 🥩 Image 5 shows the two different oyster varieties plus shrimp cocktail. The shrimp seemed ordinary compared to the outstanding oysters. 🍤 🥩 Image 6 presents classic grilled octopus with potatoes—the octopus perfectly chewy, the potatoes soft and comforting. 🐙 🥩 Image 7 was the night's biggest surprise: Picanha "Prime Rib." Picanha, cut from above the rump with outer fat wrapping lean meat (sometimes called little sirloin), was prepared here like prime rib but more fragrant and better textured—instant love! 🥩💫 🥩 Image 8 features dry-aged ribeye and mushroom sides. We ordered medium-rare, but it arrived overcooked. We asked the server to re-grill it, and the second attempt achieved perfect medium-rare. The flavor and quality were good, though the Picanha unfortunately outshone its sibling. 🍄 🥩 The final image shows all the restaurant's desserts. We ordered two, and the house gifted one (due to longer wait times). From left: grilled peach with Basque cake mousse / triple-layer chocolate cake / tres leches tiramisu. Conclusion: all quite sweet—just pick one according to your preference! 🍰 The restaurant carries the same vibe as the chef's other establishments, with guaranteed flavor and quality. Prices are reasonable compared to similar-tier steakhouses—definitely worth revisiting!
