Dear Margaret — Canadian‑Inspired French Fare with Delicious Rabbit

My friends have been recommending Dear Margaret for ages — finally made it last weekend. It’s a Canadian‑French fusion spot, though the vibe feels like a creative blend of American comfort and French technique. The restaurant is named after chef Ryan’s grandmother, and many dishes reflect his upbringing in Canada. A key feature here: everything is made with Midwest local ingredients. Our server kept highlighting carrots, beets, and other regional produce (though we weren’t exactly in a “healthy eating” mood that night 😄). 🍟 Started with frites fried in beef tallow — crisp with a unique rich aroma. A bit pricey for fries, but worth a try. 🐇 Must‑try: Rabbit Ragù It’s rare to find rabbit on menus! This one came with chanterelles and duck‑fat gnocchi — absolutely delicious. No gamey taste, just the gentle fragrance of herbs. 🦆 My Favorite: Duck Breast Tea‑smoked with a honey‑glazed skin, tender and not at all dry or gamey. Served over a local‑oat “risotto” that complemented the duck perfectly while adding its own subtle texture. 🍷 Fun Bonus We met the wine supplier for DM that evening — chatted her up a bit, and she generously offered us two glasses of sherry with a lovely date‑like aroma. Already in love with this place — humble on the outside, exceptional on the plate. Will definitely be back.
