DMV’s Italian Cheese Wheel Carbonara 🧀

They say Carbonara is one of the dishes that truly tests an Italian chef’s skills, and many restaurants don’t offer it unless specifically requested. This place near Arlington Ballston is named after it, so it was a must-try. 🧀 The bread and appetizer meatball were just okay, not served hot, and the meatballs were a bit solid, with the cheese already a bit dry, which slightly lowered my expectations. 🧀 But the main event, the Carbonara, was absolutely stunning once it arrived. The noodles seemed to be handmade, with a good bite but not hard. The taste might have been slightly modified to suit those who don’t like it too salty. The crispy pork crumble was fried to perfection and not greasy, topped with parmesan cheese – it was fantastic. 🧀 We also tried the chicken parmigiana recommended by the waiter, which is a fried crispy chicken cutlet with vodka sauce pasta. The chicken was crispy outside and tender inside, and the pasta was a bit harder but very fragrant. In summary, the main courses were a pleasant surprise, especially the Carbonara, which could rival those in Italy.
