Heffer BBQ — Chicago Pop-Up Burger Series 🍔

I was lucky enough to try Heffer BBQ’s smoked meats at Kimski before — and loved it. This week, they ran a burger pop-up with only 50 available, so I jumped on it fast! 🍔 The burger featured ½ lb of brisket smoked for 48 hours — juicy, smoky, and packed with flavor. Topped with melted American cheese and a secret burger sauce, it was so good I ate it in the car on the way home — maybe even better than some of Chicago’s secret burger favorites! 🍔 The chef actually apologized because the supplier sent the wrong buns — they were supposed to be poppy seed buns, but plain ones were still delicious. Next time, I’d love to try the original version! 🍔 Fries fried in beef tallow — crispy, savory, and seasoned with what tasted like celery salt — lightly spicy and herby.
