Went back to Loon with a friend for a condensed version of their tasting menu โ€” still helmed by chef Devin, formerly of Michelin two-star 42 Gram. ๐Ÿง… Onion tart with fermented cheese and caramelized onions โ€” tangy, sweet, and appetizing. ๐Ÿš Minced scallop ceviche with grapes, pandan, and pickled cucumber โ€” bright, fresh, and deliciously balanced. ๐ŸŸ Black cod with potato purรฉe โ€” silky, sweet fish paired with creamy potatoes. ๐Ÿฆช Mussels with charred kale and kombu โ€” briny and savory, though a bit salty. ๐Ÿฆข Foie gras and fennel rhubarb roll โ€” rich and decadent, though a bit too heavy for my taste. ๐Ÿฎ Aloe vera jam tart โ€” light, jiggly, and subtly sweet. My favorite dessert of the night! This remains a Michelin-caliber pop-up with Nordic-Japanese fusion that suits Asian palates. The only downside: we left not quite full โ€” but their usual pop-ups run 12โ€“13 courses, so youโ€™ll likely be satisfied.
