Went back to Loon with a friend for a condensed version of their tasting menu โ still helmed by chef Devin, formerly of Michelin two-star 42 Gram. ๐ง Onion tart with fermented cheese and caramelized onions โ tangy, sweet, and appetizing. ๐ Minced scallop ceviche with grapes, pandan, and pickled cucumber โ bright, fresh, and deliciously balanced. ๐ Black cod with potato purรฉe โ silky, sweet fish paired with creamy potatoes. ๐ฆช Mussels with charred kale and kombu โ briny and savory, though a bit salty. ๐ฆข Foie gras and fennel rhubarb roll โ rich and decadent, though a bit too heavy for my taste. ๐ฎ Aloe vera jam tart โ light, jiggly, and subtly sweet. My favorite dessert of the night! This remains a Michelin-caliber pop-up with Nordic-Japanese fusion that suits Asian palates. The only downside: we left not quite full โ but their usual pop-ups run 12โ13 courses, so youโll likely be satisfied.
