Mediterranean Restaurant near Boulder University
đCafe Aion After a day of hiking, we stopped by Aion and were warmly welcomed by very competent staff. We enjoyed the space, the atmosphere, and the extensive menu. âWe warmed up with carrot soup and savored the Aion Burger, accompanied by local rye beer. This cafĂ©, located near Boulder's university district, features a classic Colorado sunlit patio. đ·On our second visit, we deliberately chose a weekday afternoonânoticing fresh rosemary pots on the tables and hearing the distant chimes of the University of Colorado's class bells. đThe Eggs Benedict truly maintained their standard. The English muffin was toasted to a golden brown, the hollandaise sauce was as smooth as silk, and the use of shredded pork instead of traditional ham showed thoughtful creativity. đHowever, the gazpacho that followed was disappointingâthough garnished elegantly with herbs and olive oil, the flavors of tomato and bell pepper were as faint as if washed away by rain. #BoulderEats #MediterraneanCuisine #UniversityOfColorado
