Must-Eat in OKC | I Could Eat This Pho Three Days in a Row! 🇻🇳🍜

Before coming to Oklahoma City (OKC), I never expected to be totally obsessed with a Vietnamese restaurant! Especially their pho (Vietnamese noodle soup) — I’ve been recommending it to everyone I meet. Even though I haven’t been to Vietnam, I dare say this is the best pho I’ve ever had; it won me over in just one bite! The restaurant is called VII Asian Bistro, tucked away on a street in OKC. Its storefront isn’t particularly eye-catching, but as soon as you walk in, you’re greeted by the faint scent of lemongrass and beef broth, which instantly whets your appetite 😋. Every time I come, I definitely order the classic Pho Bo (Beef Pho). It’s served in a big bowl, steaming hot with wisps of smoke rising. I always take a spoonful of soup first — it’s incredibly savory! The broth is rich and well-simmered, with layers of flavor from beef bones, lemongrass, onions, and other ingredients. There’s no extra monosodium glutamate, just the natural sweetness of the ingredients, and it never feels greasy even until the last sip. The toppings are also super generous: thin slices of raw beef are blanched in the hot soup until they turn pink in seconds; there are also tender beef meatballs and chewy beef tendons, so every bite offers a different texture. The noodles are the perfect thickness for pho — smooth and slippery, and when you slurp them up with the broth, the satisfaction is off the charts! I also add a spoonful of the restaurant’s bird’s eye chili and fresh basil; the spicy-sour taste mixed with the herbal aroma takes the flavor to the next level, and I even finish every drop of the soup 🥢. Besides pho, the appetizers here are also worth trying! For example, the spring rolls — the outer skin is so crispy it makes a "crunch" when you bite into it, filled with fresh shrimp, cucumber, and herbs. Dipped in sweet and sour fish sauce, they’re refreshing and not greasy, making them the perfect pairing for pho. The staff is also very kind; when they saw I was a first-time customer, they took the initiative to explain how to pair the seasonings, which made the experience even better～☺️☺️☺️ Now, every time a friend comes to OKC and asks me where to eat, the first place I recommend is VII Asian Bistro!
