Rome | Rome's Favorite Restaurant: Acquolina 🍽️
Acquolina is the most anticipated restaurant on this trip, and it is also my favorite restaurant in Rome. 🌆 Located on the first floor of The First Roma Hotel, the overall decor is very modern, simple, and stylish, which complements the style of its dishes. Acquolina specializes in seafood creative dishes; the 7-course menu features only seafood, while the 9-course menu adds red meat. I chose the 9-course dinner, paired with 9 glasses of wine. 🍷 This menu excellently showcases the natural flavors of each ingredient. Every dish, the combination of ingredients, and the pairing with wines have clearly been thoughtfully considered, balanced, and carefully crafted. The sense of harmony is strong. The overall production and rhythm have really captured my heart. 🥰 From service, wine pairing, ambiance, culinary creativity, and presentation, to even the visual appeal, everything is delightful. Price: Dinner + pairing for over 340 Euros. ——Specific Dishes—— 🌟Let's start with the Sweet corn Spaghetti with sea urchin, peated whiskey. Acquolina's uni pasta is different from what I've had over the years, mainly because it adds peated whiskey, which neutralizes the heavy sweetness that uni pasta can often have. Paired with a 🌟🌟whiskey-based cocktail, it's sweet and perfectly complements each other. My favorite dish of the night! 🌟The amuse bouche is perfection, instantly setting it apart from the previous day's experience at moma. 🌟Butter mixed with Garum (which uses anchovies and shrimp), served with three types of bread, it's to die for! A carb lover's paradise. 🌟Red prawn with fermented ewe milk. Fresh, sweet, and full of fruity flavors! 🌟Mullet paired with duck heart, the fish is a bit salty and overcooked, but the wine cuts through the greasiness like a sharp knife. 🌟Eliche pasta with borage, squid, chorizo. Huge spiral pasta with a slightly hard texture, and the "sauce" is excellent. 🌟Gerusalem artichoke. I'm not usually a fan of Jerusalem artichokes, but the whole preparation here was quite tasty. 🌟Mushroom with sea snail, parsley, delicious! 🌟Guinea fowl with monkfish.
