Probably the best Texan-style barbeque we've had here in Australia. And we've tried lot throughout Sydney and the South Coast.

Food 🍖 We ordered the share platter and a half rack of ribs and swapped a coleslaw out for mac and cheese with an upcharge of $3 (reasonable as that is the price difference in cost of sides).

The burnt ends were the star of this Rodeo. Chefs kiss.

I'll preface the following saying we prefer our bbq with sauce cooked on, even in the last 10 minutes, not added ourselves once on the plate. While this does add the opportunity to cater to many taste profiles, it doesn't give me the same rib experience I am looking for and feels like i am masking the flavour of the ribs and chicken etc - or like I am adding sauce to a sausage sandwich; fine for a sausage, not so much for quality barbecue

Brisket was well cooked, but for us would have benefited from a slathered sauce.

Chicken was tender and lovely texture, just wish the rub was different from the ribs. It was slightly spicy, not heat but warming sensation remained after eating.

Coleslaw was good, won't change your world but would happily eat again. Better than a picnic coleslaw.

Mac and cheese was unfortunately a little cold and did not tase fresh. This was more of an Aussie style mac and cheese bake with tiny macaroni, not creamy dreamy saucey elbows like Cracker Barrel and the like.

Cornbread was more like a corncake and not fluffy or to our liking. Very dense. Like the above it tasted a little old. Cornbread recipes do differ depending which state style you're used to, this just wasn't the southern style we know and love.

Overall, most was pretty high quality and felt truly homemade. The dry rub on the ribs and the chicken were the same, while tasty, we would have preferred a difference in the rubs and flavours

Fun cowbow/cowgirl/cowpeople hats that are used as table numbers. Also available for purchase for $10.00 fun souvenir.

Ample bathroom facilities that were clean and had A+ toiletpaper 🧻 Restaurant was clean and orderly

We went in Winter and it was cold inside from the breeze when the doors were left open.

Staff were lovely. Can be a bit noisy depending on the other guests and the size of their parties, even at 5pm. Didn't order drinks so can't...

The Peacemaker Saloon - A True Gem! Just had an absolutely incredible family feast at The Peacemaker Saloon! All 8 of us were blown away by the quality and taste of the food. The brisket burgers and pork belly burgers were sensational, and the massive plate of nachos was a hit with everyone. But the real star of the show was the large smoked brisket and burnt ends, the portion was unbelievably generous, and the meat was melt-in-your-mouth delicious! The accompanying cornbread and creamy coleslaw were the perfect complements. It's clear that The Peacemaker Saloon focuses on doing a few things exceptionally well, and their smoked meats are a testament to that, especially knowing they use a Traeger smoker right on site. You can taste the love and care in every bite! The service we received from Matt and Paul at the bar and in the restaurant was truly outstanding. Their friendliness had that genuine American soul, making us feel so welcome. Paul's memory for our drink orders was particularly impressive, he remembered everyone's preferences each time! It made the whole experience feel so personal and attentive. We also thoroughly enjoyed the cocktails, which we felt were priced just right for the quality. And for the whiskey lovers out there, the selection is truly vast! The beer options, from tins to fresh taps, were also spot on. We're already planning our next visit and are determined to find this hidden Doc's Den VIP room next time! If you're looking for delicious, authentic smoked meats, fantastic drinks, and top-notch service with a genuine smile, look no further than The Peacemaker Saloon. Highly, highly recommended! Thank you guys for a...

A Truly Outstanding BBQ Experience at the Peacemaker Saloon

My son took us to the Peacemaker Saloon in Canberra, and we decided to share the BBQ Board—a sample platter of house-smoked brisket, pork ribs, burnt ends, roast chicken, cornbread, mac ’n cheese, and creamy southern-style slaw. From the very first bite, we were blown away!

The meats were perfectly cooked—juicy, tender, and bursting with flavor without being greasy. It’s exactly how an American BBQ should be. The brisket and ribs were melt-in-your-mouth delicious, and the burnt ends had the perfect balance of smoky richness.

The sides were just as impressive. The cornbread was fluffy and light, the coleslaw fresh and creamy, and the mac ’n cheese was a delightful surprise—creamy yet sophisticated, with just the right hint of spice to make it stand out.

Every element on the platter was perfection. We couldn’t fault a single thing about the meal. It’s clear the team at Peacemaker Saloon takes immense pride in their craft. If you’re looking for authentic, top-notch BBQ in Canberra, this is the place to go.

We are now converts. We’ll...

Well howdy, partner! Hitch yer filly to that there rail and let me tell y'all about The Peacemaker Saloon. The folks runnin' the show know more about 'Merican liquor than ol' Eliot Ness himself. With the casual pre-cision of a gunslinger holstering his Colt, they whip up cocktails that'd make a coyote howl in de-lite! They've got their service down pat too; quicker than a jackrabbit and friendlier than a country doctor. Me and my gal felt as welcome as a cool breeze on a Tucson summer day. I tell ya, its a great crowd too! A lot of freindly folks laffin and havin a good time; cheerfulness swirls around The Peacemaker like smoke 'round a Texas campfire. But seriously; a great casual, warm, friendly vibe. A fantastic range of (mostly American) spirits, well chosen draught beers and delicious cocktails served by freindly, enthusiastic professionals who seem to really care. Its a wonderful theme, well implemented; the place is more fun than a gerbil ranch! Highly recommended for a happy night out. (The good music is a bonus too)

Another unique bar has joined the Braddon scene! The cowboy vibe very much matches the bourbon-theme drinks. The staff were great, and the owner (aptly named Andy, a great cowboy name!) is very focused on creating a good experience for everyone. Ask about the hidden room. It's great to come across a cocktail bar that also does legitimate meal options. Try the corn bread! The decor is fantastic and really fits in theme. Feels really cool to sip a bourbon in a darkened saloon. It's a great place to bring a date or small groups, book ahead if you're a larger group.
