Sincero is stunning Italian and something more - an innovative menu and memorable dining experience amidst myriad Melbourne restaurants. A small but diverse and high quality menu whets the appetite. The deliciousness that ensues meets and exceeds expectations. Beautifully salty Smoky Bay oysters, a spicy salumi, and skewers of excellent octopus with sausage make for a great start. The seaweed seafood spaghetti is a revelation - a generous serve of something sounding both familiar and refreshingly different. The flavour in this one dish is worth coming for alone. And mopping up the seafood sauce with the fabulous house focaccia is delightful. The short list of mains is no issue when they are so good. Amazing marble score 8 wagyu that melts in your mouth is a must, with a fresh salad side. And the barramundi / fish of the day is pan fried perfectly with firm flesh and crispy skin that happily soaks up the capsicum, onion and bean accompaniment. All of this offered in tandem with a fabulous wine list sporting interesting cocktails and fantastic wines put together with thought and care. Leave room for dessert because it’s completely irresistible. The ovetto, a bacon and eggs signature dessert, presents as appealingly as it tastes. The sampietrino, a cobblestone of ricotta and sour cherry enrobed in chocolate, contrasts flavours and textures pleasingly. And the coconut delizia transports you to a tropical island with the first bite. Top it off with a chilli amaro digestive and the zingy house made limoncello that arrives at the end of the night, and you have a sincerely spectacular meal. Beautiful ambiance and a very warm welcome from the lovely Cinzia and fantastic staff made us feel right at home.
The Italian heritage menu is impressively diverse, offering a tantalizing array of traditional Italian dishes with a modern twist.
Evening got off to a great start with our favourite cocktails, negronis for the husbands and barolio sour for us ladies. Never disappoints.
Entrees were mojito oysters and sulume of the day. The mojito oysters were delightful and the pickled celery that accompanied the sulume was just right.
The fish and risotto of the day, barramundi and seafood respectively, again didn’t disappoint. Both of the husbands were very impressed with the risotto!
The homemade ravioli stole the show; the pasta and portion size was perfect with the custard and black truffle sauce richly flavored, showcasing the chef's genuine passion for Italian cuisine.
The wine list is extensive and thoughtfully curated, showcasing Fabios exceptional sommelier skill and tastes. The recommendations from David were spot on, enhancing our meal beautifully.
Service throughout the evening was impeccable; attentive without being intrusive, which made the dining experience even more enjoyable.

We recently booked a Saturday night dinner at Sincero, a new Italian restaurant in Malvern. From the moment we walked in, we were struck by the warm and welcoming atmosphere. The staff, all Italians, greeted us like family, creating a genuine feeling of being transported to a charming trattoria in Milan or Tuscany.
The design is a delightful blend of old meets new. The intimate space, housed in an older building, boasts modern and creative decor. This theme carries over to the menu, which offers a modern interpretation of classic Italian dishes. We opted for the a la carte menu, featuring beautifully presented and delicious food. The extensive wine list provided the perfect complement to our meal.
For larger groups, Sincero offers a private room upstairs. Just a friendly heads-up: there's a rather steep staircase leading to the restrooms, so be mindful of those delicious Italian wines!
