Oak & Vine at Cypress Lakes Resort
Nestled in the scenic Pokolbin area, Oak & Vine Restaurant at Cypress Lakes Resort offers a refined dining experience that beautifully marries local produce with Sri Lankan-inspired flavours. With a commitment to showcasing the best of the Hunter Valley, the restaurant strikes a graceful balance between creative flair and classic technique.
Entrée: Half Shell Scallops
A striking start to the meal, the scallops were impeccably fresh and delicately presented. The tangy coconut crust added both texture and an unexpected tropical brightness, while the finger lime pearls popped delightfully, providing a vibrant contrast that elevated the dish beyond the ordinary.
Main: Sous Vide Grainge Eye Fillet
Cooked to perfection, the Grainge eye fillet was rich, tender, and deeply flavourful. The sweet mustard pumpkin purée was a clever touch—its subtle sweetness and earthy warmth balanced the richness of the meat. The spiced mac and cheese croquette added a fun, indulgent crunch, while the fennel and jus brought aromatic lift and depth to the plate. A smart, satisfying main.
Dessert: Chocolate Coconut Raspberry Pebble
A standout finale. The presentation was both modern and inviting, with the coconut sorbet delivering a clean, creamy counterpoint to the richness of the chocolate. The berry compote tied the dish together with a tart flourish, while the raspberry notes enhanced the overall freshness. A well-composed dessert that avoided being overly sweet.
The ambiance at Oak & Vine is both elegant and relaxed. Staff were attentive and knowledgeable, enhancing the overall experience with their professionalism and warmth.

Read moreWe stayed at Cypress Lake Resort and decided to dine here on our first night as we did not want to venture out for dinner. What a great decision. The ambience is lovely and intimate, the service is impeccable. We were served by two very lovely ladies (initial K and D). They both are exemplary examples of service, lovely and attentive without being intrusive. The food are very easy to love: wonderful fun dishes with great use of spices (and they don't skimp on flavor for sure). We had the scallops, the baked blue swimmer crab (which came deshelled in a small dish & just perfectly seasoned). For main we had lamb and sweet & sour barramundi that came with saffron rice. Both were delish. This restaurant seems to be a hidden gem as it's tucked away in the resort. But I encourage everyone (who don't mind explosion of...
Read moreMy brother and I tried the delicious food from oak and vine at a stall at the hunter valley wine and food festival in Balmoral. We loved it so much that we had my brother's 40th birthday dinner at the restaurant at Cypress lakes resort. It was beyond amazing - the food is so delicious and like nothing we've had before in Australia - fine dining Sri Lankan, every taste was an experience. The chef was also so lovely and friendly and came out and greeted us and chatted to us at the end of the night. I would highly recommend this restaurant if you are visiting the hunter or keep on the look out for if they have any future stalls -...
