Apollonia is one of Sydney’s best-kept secrets — a moody, romantic underground bar tucked beneath Hinchcliff House. From the moment you walk in, the atmosphere transports you somewhere cinematic, with warm lighting, deep leather seats, and the kind of old-world Sicilian charm that makes you want to stay for hours. We came here for a drink before going to Lana upstairs for dinner. I ordered the Sylvester Stallone cocktail and it was absolutely phenomenal — bold, balanced, and packed with character (just like the name suggests). It was one of the most memorable drinks I’ve had in Sydney, and you can really tell the bartenders take pride in every pour. The cocktail menu is full of personality, and the staff are more than happy to guide you based on your preferences. The service was impeccable — friendly, knowledgeable, and perfectly timed. The bartenders knew their stuff, and their passion for the craft really elevated the whole experience. It never felt rushed, even on a busy night, and the attention to detail was spot-on. While I didn’t dive into the full food menu, the snacks and small plates on offer were well thought-out and paired nicely with the drinks. It’s a perfect spot for a pre-dinner cocktail or a late-night wind-down. If you’re into great cocktails, intimate settings, and that elusive mix of style and soul, Apollonia is a must-visit. I’ll absolutely be back, No split billing, and it can get very busy at times.

Finding a seat can be a challenge, and you may find yourself waiting at the bar for a little while until one of the limited tables opens up (this is my only gripe). The staff, however, are looking out for you and will let you know if they know you're looking. You really feel looked after at this bar. Go on a Friday or a Saturday and you might be lucky enough to get a free shot. What a pleasant surprise! I will happily return here. A great experience to have with a significant other or a small group of close friends.

We found a cozy corner and delighted in the extensive Godfather inspired menu of cocktails. Each drink was so delicious and fun. My favourite was the Hills of Savoca (strong citrus notes), my partners was Love at First Sight (so smooth ) The staff here love what they do. It shows in their smiles, the care they take in making the magic happen with these drinks and their attentive and warm vibes. Our waitress( sorry I didn't ask her name for this review, long dark brown hair, high ponytail) was such a delight. Incredibly professional, super attentive, and elevated our experience to a great night! The food was delicious and I imagine it comes from the sister restaurant upstairs! We will definitely be back and highly recommend Apollonia. Get in by 4:30 pm to get a good table.

Hidden away bar in the city. Arrived and there was nobody to be seen except a security guy in conversation with his mate. He made my friend and I wait outside, which was fine (we assumed it was full). We waited for 10mins and nobody had entered or left and it didn't seem busy inside, so we asked how long we would wait for... he paused his important conversation, asked for our IDs and then just let us in. It was half empty inside. I think I speak for everybody when I say that one of my least favourite things in the world is power-tripping security staff. The drinks were not great and the service was a bit shoddy inside, but Maddie came to the rescue and saved the night! She came over when she thought something was wrong (I had barely touched my pure ethanol lethal cocktail described as "luscious spicy fruit") and she replaced it with a gimlet (hard to get wrong) and was just so understanding and kind to us. She could tell we were miserable in there. I looked for her before she left to thank her but couldn't find her. Maddie, you salvaged the night. The only other positive about this bar was the lighting. I think it has potential to be great - just needs a new guy out the front, better drinks, more stools/places to sit, and less drab decor, and...
