Apollonia is one of Sydney’s best-kept secrets — a moody, romantic underground bar tucked beneath Hinchcliff House. From the moment you walk in, the atmosphere transports you somewhere cinematic, with warm lighting, deep leather seats, and the kind of old-world Sicilian charm that makes you want to stay for hours. We came here for a drink before going to Lana upstairs for dinner.
I ordered the Sylvester Stallone cocktail and it was absolutely phenomenal — bold, balanced, and packed with character (just like the name suggests). It was one of the most memorable drinks I’ve had in Sydney, and you can really tell the bartenders take pride in every pour. The cocktail menu is full of personality, and the staff are more than happy to guide you based on your preferences.
The service was impeccable — friendly, knowledgeable, and perfectly timed. The bartenders knew their stuff, and their passion for the craft really elevated the whole experience. It never felt rushed, even on a busy night, and the attention to detail was spot-on.
While I didn’t dive into the full food menu, the snacks and small plates on offer were well thought-out and paired nicely with the drinks. It’s a perfect spot for a pre-dinner cocktail or a late-night wind-down.

He made my friend and I wait outside, which was fine (we assumed it was full). We waited for 10mins and nobody had entered or left and it didn't seem busy inside, so we asked how long we would wait for... he paused his important conversation, asked for our IDs and then just let us in. It was half empty inside. I think I speak for everybody when I say that one of my least favourite things in the world is power-tripping security staff. The drinks were not great and the service was a bit shoddy inside, but Maddie came to the rescue and saved the night! She came over when she thought something was wrong (I had barely touched my pure ethanol lethal cocktail described as "luscious spicy fruit") and she replaced it with a gimlet (hard to get wrong) and was just so understanding and kind to us. The quality of drinks are excellent. The cocktails are creative and the effort put into each glass is undeniable.
The background music is a warm mix of old school rock and rhythm & blues, that will make you comfortable to simply sit and sip on a beveridge and nod your head to the beat.
Finding a seat can be a challenge, and you may find yourself waiting at the bar for a little while until one of the limited tables opens up (this is my only gripe). The staff, however, are looking out for you and will let you know if they know you're looking. You really feel looked after at this bar.
