In the history of mankind, there has been several significant milestones - the taming of fire, the invention of the wheel, societies move from nomadic to substance farming, the Renaissance, the industrial revolution, and the rise of the digital age. All pale in comparison to the opening of Staples on Mountauban Ave in Seaforth.
From it's modest positioning betwixt a chiropractors and a suburban single story bungalow, Staples stands like a rampant Colossus across the baking world. You can forget other local baking empires run by rugby playing Brothers, or Mums and Dad's of Welsh or psuedo Belgium origins. James, the estwhile and eclectic owner, conjures every Friday, Saturday and Sunday baked goods, coffee and sourdough of such superiority of deliciousness and aroma you'd swear he had been anointed by the Good Lord himself.
The masses that start to appear outside the door (or portal to sourdough Nirvana as I call it) are not so much there to simply buy a loaf, grab a coffee or pick up a couple of croissants. They are there to worship at the alter of Staples. I have seen grown men rent their garments asunder, women shave their head, children wail and even dogs howl, all lamenting James's decree "Sorry, we've run out of Pain Au Chocolates"
When I stand before my maker at the Pearly Gates, I'd gladly take the down escalator to Belezabub and eternal damnation if I could stop off for a Ham and Cheese Croissants, large Flat White and a Pain Au Chocolate on the way.

But, that's okay, despite being relatively unknown compared to the fame of Iggys, there is a loyal, stable line of local patrons lining up for this bread early on weekends, though the line is not as long as Iggys so makes it worth the extra effort of a trip for me North of the bridge. The regular sourdough option is a great loaf. And the flaky croissant is one of the best in Sydney, crunch layers enfold soft butter layers, perfect. You can see the bakers at work through the window and they sell baked goods from the front open window.
They sell a range of types of sourdough loaves (regular sourdough, spelt, rye loaves, grain), foccacia, cakes and croissants. We tried a delicious cheese and oregano croissant (nice and crunchy on the outside) as well as a plain croissant.
