The cuisine is exceptional, as you can expect from a restaurant of this type. It's all very subtle, sophisticated and surprising. I was just disappointed in the quality of the beef, which was not very tender. In terms of wine, I was less enthusiastic: while I'm not against natural wines, some of those I got were not very interesting and lacked complexity, in my opinion. The service was quite good but not very enthusiastic, and it was hard to hear what they were saying because the room was too noisy (it's however nice that the staff can explain the dishes and wines in English). The tables are very close to one another, it doesn't feel right for this type of restaurant. While booking on the phone, I had asked for a special birthday attention, and I was told it was possible. But once I asked again at the restaurant, I got nothing at all. Another thing which is not worthy of this type of restaurant is that it's not possible to get a printout of the list of the dishes and wines at the end. Also, the starter took some time to arrive, which made us hurry at the end because we only had a strict two and a half hours before our table was occupied by someone else; while that amount of time may seem like more than enough, it is actually barely enough for 5 courses.
All in all, I was doubting between 2 and 3 stars, but opted for 3 as the food is fantastic and that's the most important thing in a restaurant. However, besides the food, there are many things which are not ideal. The price is not outrageous for this type of restaurant (104 euros per person: 69 euros for 5 "courses" + 35 euros for the 5 medium-sized glasses of wine to go with the courses), but it's definitely not on the cheap side of its...

Two of the dishes that were served to me were literally the same as my fellow non vegetarian guests. Except without the meat (or specifically fish) . They did not go through any trouble to explain to me why they made the decision to just serve me a plate of mashed potatoes drenched in sauce, which apparently with the fish was lovely, but without it it just felt very strange.
