Very classy restaurant serving a wide array of regional cuisine, savory flavors and unique dishes. The menu offered the standard restaurant basics such as dry garlic ribs, cheese burgers, and salt and pepper wings. But the more advanced pallet may enjoy the appetizer we ordered which was Scallops and Bacon - pan seared large scallops stacked on top of spinach and thick sliced maple bacon. The plate came to the table with only 3 scallops/bacon for $16, but we needed to slice them into smaller portions, and then enjoyed each bite. Our main courses were amazing in the context of not only flavor, but portion size and presentation. The house special was grilled salmon served over wild mushroom, asparagus and shrimp risotto, topped with fresh sprouts. My husband attempted to finish his meal - the North Folk Ranch Elk Ribeye: Seared Elk Ribeye, Elk Wild and Brown Rice Cabbage Roll, hand made Aged White Cheddar Perogies, surrounded by a Saskatoon Berry and Port Reduction; but some managed to come home with us. The elk was superbly cooked and each bite was mouth wateringly tender. The services was outstanding,our waitress was professional yet personable. We were driving from Lethbridge to Medicine Hat after playing golf in Lethbridge earlier that day and I told my buddy to make sure he had a good appetite as he would be pleasantly surprised by the restaurant in the parking lot of our hotel. As mentioned, we just made it in time to order and sat outside on their patio in the warm summer evening with patio lights and music in the background. He ordered the rib dinner and I the seafood pasta. As they delivered them to our table, we looked at each others order with envy but knowing how good our own order looked. The pasta was heaven and my buddies ribs were the same. With a little wine to accompany our dinner, we were absolutely stuffed and completely satisfied. The staff was excellent as was the service and food. My friend said he'd definitely be back next time he was in town. I've ate at Rustic a handful of times before this and have always had the same exact experience. Our waitress had a lot of customers enter all at once so she was a little slammed. My date ordered the Lobster Ravioli, but sadly they had already run out. She settled on the Seafood Linguine and I ordered the Cheeseburger with Fries. The linguine was good, but did not come with any bread (they had also run out of this it seems) or soup or salad. For $ 28 this should have come with a side. A single serving of linguine is not worth $28. My Cheeseburger came well seasoned, albeit far closer to well done than medium. Fries were very nicely seasoned, crispy, and the side order of aeoli made for a nice dipping sauce for the fries. $14 for this Cheeseburger would be on point if the fry portion wasn't the size of a McDonald's small fries. I will bring my date back to the Rustic Kitchen just so she can get her Lobster Ravioli. Overall, impression was good, but needs improvement.
