Simply perfect. That first bite was such a surprise! Not what you’d expect, from this tiny, humble take-out joint in an industrial zone. Now, normally I order heaps of toppings (and the meat-lover’s did live up to its name) but a simple cheese pizza is the true test of a pizza chef: with so few elements, the quality of the ingredients (and the cook’s skill) can’t hide. Capital Bites aced the test. The crust was first to put my senses on notice: delectably fragrant, it was crisp to the tooth, then tender. In texture and flavour, it was very like an Italian crusty roll, the kind served hot in a linen-napkin-lined basket, fresh from the oven of the best trattoria. The pizza sauce was the real deal, too, simmered with enough herbs and aromatics to make it savoury and richly intriguing, without overshadowing the sunny goodness of tomato. No cornstarch, no sheen of msg, no fake anything; just an honest tomato sauce, done right. The quantity was by no means skimpy, but I may order extra next time, just because it’s so good. And cheese? Of course it was good cheese. Even better? There was enough cheese! How often do you find that, without having to order extra? And it was cooked long enough, at the correct temperature to be bubbled, golden, and nicely firmed-up, without any scorching anywhere on the pizza. It takes longer to cook a pizza and get this result (no ten minute wait: expect closer to half an hour, if you go when only one cook is manning the kitchen, and you order a variety of foods, but know that it’ll be worth the wait.) The crispy chicken sub was made with chicken that’s breaded and cooked in-house. Again, crispy & tender and delicious. Served on a toasted sub bun, with plenty of lettuce and tomato, it was superb with the house-made garlic sauce. There was fresh sour cream to go with the wings, and these were crispy-tender, with just the right amount of sauce: plentiful, without being sloppy. We’ll be going back soon, maybe bowling at the nearby lanes to work up an appetite, and then standing around the picnic tables in the cold again, enjoying the heck out of Capital Bites’ menu. I could barely taste the pizza sauce so I wish they would add just a bit more. It’s $1.50 to add more if you want to taste it. I had the supreme pizza and Canadian Pizza takeout special which is an insanely good deal for $25.65. I’d love to see more pizza options, eg. Like a 4 cheese pizza with onions or garlic, and a margarita pizza. The supreme pizza was a perfect balance of salty with just a tad of sweetness and tang from the pineapples and hot peppers ( just the right amount and neither were overloaded).
