The staff (a team of 3 - including the chef) are hospitality experts and will make you feel very cared for. Surprisingly, this is a no tip restaurant, even though you’d be hard pressed to find a restaurant where you are better attended to.
The team works on a philosophy of sustainability and environmental stewardship - they use only sustainable and humane ingredients produced within 50 km of Quebec City. They explain their philosophy in a story like format, which is all a part of the wonderful expedience.
This brings me to the food. Not only is it delicious, it’s creative. Prepared to be served a dish you’re going to continue thinking about well into the future. It’s interesting, unique, and completely satisfying. It may seem expensive at first glance, but considering the quality of ingredients and built in tip, you’re getting a deal.
