Dragon Well Manor — Restaurant in Hangzhou City

Having been impressed by the cuisine of Hangzhou when it was my first home in China over a decade ago, and subsequently having read Fuchsia Dunlop’s high praise of this restaurant, my expectations for Dragon Well Manor were high. However, even those high expectations were blown away by one of the most memorable culinary experiences of my life.

Dragon Well Manor offers a truly excellent dining experience, featuring multi-course meals of ingredients both luxurious and commonplace, but all elevated to an extraordinary level through local organic sourcing and expert preparation with exquisite attention to detail. Particular highlights included a Shaoxing duck stewed with chanhua, a marvelous rendition of red braised pork, braised sea cucumber which melted in our mouths, and a truly luxurious presentation of hairy crab meat and roe (which was in peak season) that arrived at the table picked from the shell and ready to savor from a bowl.

Wait staff were warm and attentive in both Chinese and English, and made our large party feel at home around a grand round table surrounded by traditional Chinese paintings and woodwork. After our lunch, we enjoyed a stroll around the restaurant’s sprawling grounds which feature beautifully manicured Chinese gardens.

At around $100 USD per person, our lunch at Dragon Well Manor wasn’t cheap by local standards. However, to dine this well in the USA or Western Europe would likely cost much more, and I found it well worth splurging for a special occasion with friends. 🎗️ ไร่ชา Longjing หรือที่รู้จักกันในชื่อ “ชาเหมยจิ่ง” เป็นหนึ่งในแหล่งผลิตชาเขียวที่มีชื่อเสียงที่สุดของประเทศจีน ตั้งอยู่บริเวณเชิงเขาทางตะวันตกเฉียงใต้ของทะเลสาบซีหู (West Lake) ในเมืองหางโจว มณฑลเจ้อเจียง ประเทศจีน ด้วยภูมิประเทศที่เป็นเนินเขาประกอบกับอากาศที่ชื้นและมีหมอกปกคลุมตลอดปีทำให้ใบชามีขนาดเล็กและคุณภาพสูงกว่าชาทั่ว ๆ ไป เราขอแนะนำให้เรียกรถจากแอปพลิเคชั่น Didi ขึ้นไปบนเนินเขาผ่านจุดชมวิวไร่ชายอดนิยมไปไม่ไกลนักจะพบกับห้องอาหาร Longjing Manor (Dragon Well Manor) หรือ 龙井草堂 อันแสนเงียบสงบห่างจากถนนเส้นหลักและฝูงชน พื้นที่โดยรอบเป็นสวนขนาดใหญ่และป่าไผ่อันแสนร่มรื่น ที่จุดจอดรถจะมีพนักงานพาลูกค้าแต่ละกลุ่มเดินผ่านแมกไม้เขียวขจีรวมไปถึงสะพานหินข้ามบ่อน้ำไปยัง 1 ใน 8 ห้องที่ตั้งอยู่ภายในอาคารโบราณที่สร้างขึ้นตั้งแต่ยุคศตวรรษที่ 15 ทุกห้องจะมีพนักงานรับออเดอร์และเสิร์ฟอาหารแบบส่วนตัว ภายในตกแต่งแบบเรียบง่ายด้วยเฟอร์นิเจอร์ไม้และภาพเขียนแบบจีนโบราณสร้างความรู้สึกผ่อนคลายได้ในทุก ๆ อิริยาบถ

ร้านหลงจิ่งดรากอน เป็นร้านอาหารที่เมื่อย่างเข้าไป เหมือนเราเข้าไปในบ้านพักส่วนตัวริมเชิงเขาที่อย่างในส่วนที่จัดLandscape อย่างสวยงาม พนักงานจะเดินนำเราไปสู่ห้องที่จองไว้ โดยเราต้องเดินผ่านสวน เห็นบึง เดินผ่านสะพานเล็กๆ แล้วค่อยเดินเข้าไปในตัวห้องอาหารที่รักษาสภาพที่คลาสสิค หรูเรียบง่าย ส่วนอาหารต้องถือว่ามาในแนวอาหารคุณภาพ คือตั้งแต่การคัดเลือกวัตถุดิบ ที่เป็นOrganic ปลอดสารพิษ ทั้งหมด และเนื้อสัตว์ก็เน้นที่ความสด ร้านนี้จึงเป็นร้านอาหารขึ้นชื่อของจีน ที่คนจีนที่อยู่ไกลๆเช่นเซี่ยงไฮ้ก็ต้องแวะมาทาน อาหารจะเริ่มตั้งแต่ออเดิฟ มีแมงกะพรุน ไก่(แช่เหล้า) และที่แปลกคือ น้ำเต้าหู้ เขาจะให้เราเอาของที่มาเสริฟตักใส่ลงไปตั้งแต่กุ้งแห้งตัวเล็กๆ ต้นหอมซอยและอื่นๆ จากนั้นจึงค่อยๆทยอยเสริฟอาหารอย่างอื่น รายการหนึ่งที่แปลกคือเป็ดตุ๋น ต้องเป็นเป็ดเลี้ยงตามธรรมชาติอายุ 3.5 ปี ซึ่งเราจะคิดว่าเนื้อต้องเหนียวแน่ๆ แต่ในความเป็นจริง เนื้อเขาตุ๋นมากำลังดี ไม่เหนียว น้ำซุปกลมกล่อม อีกรายการที่ถือเป็นอาหารดังคือ เนื้อปลาไหลผัดซีอิ๊ว เนื้อปลาจะสด ไม่คาว ไม่มีกลิ่นโคลน...
