Coming from an Italian background, I must say that the ambiance of your establishment is truly beautiful and well-decorated. The food also shows promise, and there's clear potential here.
However, when it comes to Italian cuisine, authenticity is key. I understand the challenges of sourcing Italian products in Egypt due to import taxes, but overcooking pasta to the point where it's mushy is a disappointment. Pasta should be cooked al dente for that authentic texture and flavor.
On a brighter note, the fritto misto was delightful, and the Baba was delicious – compliments to the chef for those dishes.
Unfortunately, the service fell short. Our waiter seemed uninformed about the menu, which is a significant drawback. Additionally, the noise from the kitchen staff was disruptive, and the constant presence of waiters rushing around detracted from the dining experience.
Moreover, cleanliness is paramount in a restaurant of this caliber. The bathroom had an unpleasant odor, and the table lamps were noticeably dirty and sticky.
In summary, while there are positive aspects to your establishment, there's considerable room for improvement to truly capture the essence of Italian...

First attempt, the medium rare steak was cold in the middle so sent it back for some more heat. Returned much better. Second visit (as it was close to our hotel) asked for the same and the steak came out well done. It was a nice cut of meat, so no matter (although they brought the wrong side and had to wait while the steak cooled on my table).
Then the fun started with the bill. After they've added on a fortune for the water and bread you don't ask for, they decided to charge 60% more for the wine. Reason being the one ordered wasn't available so they substituted without asking. In the corrected bill, they still charged 15% more with no explanation. On closer inspection they had now added two desserts to the bill that were not ordered. This was queried and apparently it was 'complimentary', but they still charged us. All a bit of a disaster really. Food was good but not worth the price - charged 1500EGP for two mains and two glasses of wine. I...

The ossobuco was very salty, and the sauce was very umami. The usual risotto served with ossobuco, had no hint of any saffron, and was very fluffy and dry, even the rice variety was not risotto. The “fluffy rice” was served in a different plate that the meat and sauce, so you couldn’t even dip the risotto in it, the best part!
Also when asked, the waiter put an insane amount of black pepper on my plate.
The beetroot salad was cut into huge chunks, arugula leaves were uncut from stem and the goat cheese was cut into fat disks, not crumbled ok the salad.
The bread had a sugary taste, served with a watery basil/pesto sauce.
But at least the service was good and lots of marble to justify the price. Oh and and the portions are huge if thats...
