We enjoyed our experience at 1893. Our favorite part was the atmosphere of the restaurant, with not too many tables to make the place crowded and a fun but relaxing background Brazilian samba music conducive to a good time. The food was on point and the various meat courses were cooked flawlessly and at the right temperature. Best of all, we thought this place was affordable for what was offered. We had the entraña and rib eye for our main courses, and shared the rillette de pato as a table appetizer. We also had a bottle of pajarito carmenere wine which paired well with our dishes and was appropriately priced at $20. For dessert we had the Panna Cotta, which was creamy and not overly sweet. Aquí van a encontrar un auténtico respeto por la comida y sus métodos de preparación, sabores delicados y naturales pero sobretodo una ejecución perfecta de las técnicas de cocina que en estos tiempos casi nadie practica, un respeto por los ingredientes que la mayoría en su mediocridad ya no tiene, el lugar no es caro, es costoso si disfrutas la comida pero porque lo vale, el restaurante más auténtico del país por lejos y el mejor en su estilo, lugares como este son contados con los dedos de mi mano en este país, gracias por mantener con vida la buena cocina, excelente lugar.
