"Mise en place" is the French bedrock of restaurants. It means that preparation is the key to a successful service. In the case of this place, it's the key to a 2 person success story. From the complimentary puy lentils onwards, pretty much everything is pre prepared to the last detail. That's not a bad thing whatsoever. In these times of staff shortages and tight money, it pays to have a table d'hote menu of 2/3 choices per course, plus a few specials. The chef does a credible job getting the meals out in a timely fashion. The appetisers are the highlight. Both involve the chefs handy application of divided yolks and whites, accented with decent flavours and reductions. The mains are fine, in a bistro sense. The fish needs the home made noodle to be dressed with the same pistou as crowns the mediocre red fish. The whole thing is as uninspiring as a politicians resignation speech.
