The problem is .... wait ... there are no problems here. The cooking here mixes tradition and invention, without the invention getting in the way of the reason we all come to France. The maigre (jewfish or mulloway) here must have been 6-8kg, and it flakes and juices as only sensitively line caught, well butchered fish will. The rest of the plate is handled in a manner so French it makes love, not war. The desserts are 90s cool and steeped in good cookery, so they come together like great flavours will.
