Remember: this is not a place for khinkali. And you will almost certainly never be served shashlik here. Yet it’s one of the best places on Earth where I’ve ever eaten. I’ve been coming here for fifteen years — probably forty or fifty times — and with every visit my love for it grows stronger.
The restaurant is part of the Pheasant’s Tears winery, where natural wines are made using ancient Georgian methods — fermented and aged in clay qvevri buried underground. The wines are produced without filtration or additives, from local grape varieties that are being revived right here in Kakheti.
Chef Gia Rokashvili is a phenomenon. Every morning he goes to the local market himself, choosing what nature has given that day — herbs, mushrooms, vegetables, lamb, local cheese, freshly baked bread from the clay tone oven. There is no menu: you simply sit down, and the chef feeds you. It seems simple, but behind that simplicity lies precision, depth, and a profound sense of taste. This is Georgian food, but not restaurant food — it’s real home-style cooking, rooted in the land, the season, and memory.
Each dish here is part of a living dialogue between the chef, the wine, and the time of year. Food and wine exist together, each enhancing the other. And in that harmony lies a kind of perfection that never becomes familiar.

We wanted to do a wine tasting, but the waitress/manager said she is the only person in the restaurant and has the restaurant fully booked. She told us that she cannot do the tasting with us. However, until the moment we left there were at least 2 main waiters and a couple of other people helping them too, and only three tables were taken in total. We had to ask three different waiters for coffee, and instead of turkish coffee (what we asked), we received really bad filter coffee. We waited for 20 minutes from the moment we asked for the bill until we actually decided to get up and go pay ourselves because no one brought the bill.
