A Disappointing experience with Bihari Cuisine and double disappointed with behavior of owner.
I recently visited this restaurant known for serving Champaran mutton, and I was eager to indulge in authentic flavors from home. However, the experience turned out to be bit disappointing.
The champaran mutton, a classic in Bihari cuisine, was overcooked and seemed adapted to suit local preferences rather than staying true to traditional flavors. Understanding that feedback is essential for growth, I politely shared my concerns with the owner. Surprisingly, he reacted defensively and even resorted to condescending comments. He dismissed my feedback by saying, "Customers like you from Bihar are rare here," and justified the recipe changes by saying others don't appreciate the original taste. His attitude came across as disrespectful, almost as if he was unwilling to welcome feedback from someone familiar with Bihari cuisine.
It’s disheartening to see a restaurant, especially one named after a place in Bihar, compromise on authentic flavors instead of proudly presenting them. Culinary traditions deserve to be respected and celebrated, not watered down. Many cuisines maintain their essence even outside their home regions, and there’s no reason Bihari cuisine should be an exception. A more professional response from the owner, perhaps offering to customize the dish as per the original recipe next time, would have left a much better impression...But for the unwelcoming attitude towards customer's feedback...
Overall, if you're seeking authentic Bihari flavors, this place might leave you bit unsatisfied, i.e tenderness of mutton, which I believe is of utmost importance. But at least they have not watered down the masala much.
