To be honest I didn't go dining in this restaurant. I had privilege to be invited for a wedding reception lunch at Hotel Padma ballroom. And since the menu was a modern approach of Chinese cuisine I had assumed that the chefs were from Kim Tia.
The lunch started with an appetizer combo of Thai beef salad in rice paper roll, fried oyster with sesame sauce and roasted duck with hoisin sauce. The chef was trying to open up our palates with three different textures of small dishes. They were all OK, with the fried oyster as the highlight. I would've preferred the ducks with more fat and the sauce for Thai beef salad roll served separately as not all people enjoy the spicy and sweet taste of it.
They were followed by a refreshingly healthy chicken soup. Nothing spectacular about this soup, but I guess it's a good thing because it showed chefs' ability to refrain themselves from overdoing it. A touch of sour taste went a long way to ensure it could be enjoyed until the last drop of broth.
The steamed Tiger Grouper fish was served in Hong Kong style soy sauce, the sliced steak was tender drenched in oriebtal sauce with a touch of Chinese vinegar and the Ifu Mie was presented in fancy way using deconstruction approach. The dessert was beautifully served that would catch anyone's eye. The colors were aesthetically combined to enhance the elegance and rich sweet taste in various forms: custard, jelly and crunchy wafer.
Overall the chefs' effort to elevate the Chinese food into more artistic presentation without having to sacrifice the familiar taste of the dishes should be appreciated. There were room to grow, of course, but it's secondary to the boldness of the culinary team at Hotel Padma to be different in an arguably growing market of high end cuisines in...
