After having a very bad, totally burned "spaghetti all'assassina" experience at another restaurant the day before, I showed the staff a picture of it and asked if this was normal. He stated clearly that a bit of charring is normal, but not like what I had shown him. So, we ordered "spaghetti all'assassina" to find out what it truly should be like, and let him decide to assemble some other traditional food for us. What a delight!
