Stunning hotel, so-so food //

We had lunch at La Calce at the Borgo Egnazia as non-hotel guests. It's the less fancy restaurant at the hotel.

The luxury hotel is beautiful. While it looks like a renovated medieval castle, it was actually a ground-up development ~10 years ago in the style of an Apulian village. Some of us were OK with this fact; others felt that it detracted from it's authenticity. In any case, everything about the design and layout is stunning, from the olive trees, prickly-pear cactuses and bamboo-laden pergola'd parking lot to the cavernous-yet-modern interior. Unsurprisingly, the guests/customers were much more international than what we experienced elsewhere in Puglia.

The food, on the other hand, was just ok. It was health/wellness-forward. The most interesting thing on the menu was the Scorpian Fish ("Scorfano") -- the catch of the day. The ricotta salad was also delish. But you're really paying top-dollar for the ambience, not the food.

In sum -- a fun and worthwhile trip to experience the hotel, but not a restaurant we're coming back...

This is a place of absolute excellence, where the chef’s gastronomic research meets impeccable and friendly service, all wrapped in a warm and refined atmosphere. At the moment, the menu offers two main options: a 9 course tasting menu or a selection of “cards” (each with 3 seasonal dishes) that can be mixed and matched. I went for the second option and built my own journey through chickpeas, zucchini, chicory, and melon. Each card has a general orientation (appetizer, main course, dessert) which gives a natural rhythm to the meal while leaving space for creativity and personalization. The whole menu is vegetarian which I truly appreciate because it makes this experience in Puglia even more unique and interesting. I also chose the mocktail pairing, which was a great decision. The pairings were unique and well-executed, layered, aromatic or acid, and in tune with the flavors of the food.

Ci rechiamo nel ristorante Due Camini, incastonato nello splendido contesto di Borgo Egnazia, incuriositi dall’idea di cucina ecosostenibile, che condividiamo appieno, dello Chef Domingo Schingaro. Il ristorante propone diverse carte, ognuna rappresentante un vegetale di stagione del loro orto, espresso in 3 piatti: uno principale e due amouse bouche. Ciascuna carta ha un costo di 40€. Optiamo per il menu degustazione da 9 portate al costo di 180€, chiedendo di aggiungere la declinazione completa della “carta melanzana” che ci ispira particolarmente. La carta dei vini risulta ampia e variegata, a discapito di una sommelier non in grado, forse, di valorizzarla al meglio. Infatti, dopo aver scelto un Poully-Fumé del 2017 di Pascal Jolivet, le nostre curiosità relative al produttore e al vino sono state disattese con uno scarno “è un vino molto interessante”. Dopo delle entrée non particolarmente degne di nota, arriva la prima delusione della serata: l’insalata di “mare”, descritta come composta da foglia d’ostrica, asparago di mare etc, ma di questi due ingredienti non si vede nemmeno l’ombra, la portata altro non è che foglie di misticanza condite con salsa di soia e aceto di riso (o almeno lo supponiamo perché non ci è stato spiegato). Più che il mare ci ricorda una pozzanghera. La serata prosegue tra pochi alti e molti bassi, dovuti anche all’imprecisione del personale di sala che non è in grado di menzionare tutti gli ingredienti, le preparazioni e i metodi di cottura che compongono le diverse portate. Ma imperdonabili sono le imprecisioni della cucina, non degne di un locale di questa caratura. Nell’ordine: Ruote pazze, manteca affumicata e cipolla rossa d’Acquaviva, letteralmente 4 ruote crude, che sapevano solo di bruciato, a tal punto da coprire la dolcezza della cipolla e lasciare uno sgradevole sapore di amaro in bocca. Il cuore di bue marinato al BBQ, una spessa fetta di pomodoro praticamente non lavorata, con una salsa BBQ che risultava rappresa e coperta da un mix di erbe sbilanciato per quantità e scelta delle stesse, infatti sono risultate coprenti e amare al palato. Bombetta di melanzana impanata al dragoncello: avete mai assaggiato una bombetta fredda? Noi decisamente no, infatti ci è stata presentata come sostituta veg della classica bombetta pugliese, ma in sostanza un banale involtino di melanzana freddo e dalla panatura molle. Salsiccia di melanzana fermentata, oltre a non richiamarla nell’aspetto e nella grassezza al palato, risultava acidula e non saporita. Dulcis in fundo, oltre a non essere previsto un canonico pre-dessert, il dolce anguria e sementì ha acuito ancor di più la nostra amarezza sulla serata. Ci viene presentata una gelée all’anguria con i suoi sementi tostati e polverizzati, con i quali panare la stessa, ottenendo una sensazione di segatura insapore in bocca. Abbiamo, tuttavia, apprezzato quantomeno la volontà di rimediare ampliando il dessert agli altri due piatti relativi alla “carta melone”. Ma ormai il danno è fatto, ci alziamo senza nemmeno sapere se fosse prevista una piccola pasticceria, con l’unico desiderio di dimenticare uno dei peggiori stellati mai provati a fronte di un conto a dir...

We had the pleasure of experiencing the vegetarian tasting menu at Due Camini, and it was truly exceptional. Every dish was thoughtfully crafted, beautifully presented, and full of depth and flavor, it felt like a journey through the chef’s creativity and respect for the land. What made it even more special was how refreshing it felt to enjoy a fully vegetarian fine-dining experience in Italy, where cuisine is often around pasta, meat, fish, cheese… This menu celebrated vegetables in such a refined and imaginative way, it completely transported us. The food was simply exquisite. The only small detail that felt slightly out of sync with the overall experience was that we had noted it was our anniversary when booking, but it wasn’t acknowledged during the evening. Of course, it’s not mandatory, and everything else was exceptional, but in a setting like this, those little touches do make a difference. The entire evening was a beautiful balance of elegance, innovation, and soul, a memorable culinary experience that left us inspired.
