Wow. This is one of the top ten pizzas I’ve eaten in Italy. And I do not say this lightly (look at my reviews). It is not hard to make a good pizza. And if you have skill and good ingredients a very good pizza is achievable.
But an excellent pizza? That’s a different thing altogether, because you don’t have a lot to work with. And Tami pulls it off with ease. Everything harmonises, the dough is tasty and yet light (an absolute joy to eat), the tomato sauce is delicious and not too sweet nor sour, etc etc.
We had the Siciliana (I normally dread it, it’s so easy to fuck it up) and Fu Me (same). Both were at a level I can only recall at having reached at Frida in Palermo. I wish I’d taken photos, but they wouldn’t do this place justice anyway.
If you are serious about pizza, if you value it, esteem it, and don’t settle for “really good”, do yourself a favour. Come here....
