We have had a lovely and busy day In San Remo (I highly suggest visiting! So relaxing and beautiful!)
We were not very hungry (which I now regret! Come with an appetite for 3-4 courses!), but decided to try this restaurant. So glad we did.
My wife ordered the Frito Misti, executed flawlessly with shrimp I am sure were sleeping in the ocean last night. The coating was light, and though fried, not greasy. Exactly as it should be, the verraduras were slightly crisp to the tooth.
For myself I ordered the fillet Rossini, and Sr. Rossini would have been proud. The beef was prepared to perfection with all of the appropriate flavours of open flame, and yet the flavor of the meat came through in perfect balance.
The sauce was reminiscent of a merchand du vin, rich and nearly chocolatey in color with a perfect coating of the spoon and temperature. The balance of the acidic pallete against the full creamy flavor of the foie gras was not to miss.
Lastly, if you ever have a desire for a delightful mille feuille this is your spot! There are rare executions of pastry cream with such light cloud like texture and a full buttery coating of the pallete with the perfect indulgence of sweet in ratio to flavor.

But nice I got a delectable amuse bouche of a delicate crunchy fish roll, this was clearly something attention worthy. The pasta with a five tomato reduction and burrata cream was delicate and balanced beyond description. It needed nothing. Paired with glass of Vermentino this is a match made in heaven. Kudos to the chef on the primo.
Mediterranean tuna got a Japanese treatment which was well executed but a bit overwhelming in the saltiness of the sauce.
