Evò Fish Bistrot & Wine Bar — Restaurant in Vasto

When trying to make shortcut through the back alleys of Vasto we literally stumble over this superb restaurant in a little piazza tucked away in between the old houses. When asking for a table for two, we where told all tables outside was already booked, but we could be seated inside. We said we would go and try to find another restaurant, but the owner, Francesco, carried out a table from inside the restaurant so we could be seated outside.

We had an antipasti with various raw fish, scampi and octopus. It was amazing! For the main course, Francesco recommended a fish that was absolutely delicious! I am so sorry for not remembering the names of the courses or the fish.

For dessert we had the Tiramisu and wild berry cheesecake. I can't tell you how good it was! I was also served the best Grappa I have ever tasted. Even with a crowded restaurant Francesco and his wife Annalisa, found the time talk to us. We have never experienced to be taken care of on this level, by any restaurant staff. Really professional!

This restaurant is not a hidden gem, but a well hidden treasure chest. And you almost need a a pirate map to locate it, but it's well worth when you find.

We wish Francesco and Annalisa all the best for the future, because we are definitely coming back for more tastes next year!!

Ho cenato la prima volta in questo ristorante due anni fa e da allora è diventato il mio posto del cuore. La location all'interno e' elegante, raffinata e ricercata negli arredi e nelle suppellettili. Nelle serate estive è possibile cenare all' esterno, in una suggestiva piazzetta del centro storico cittadino , abbellita ancor di più dalla titolare con arredi moderni e di gusto.Il ristorante Evo è una location irrinunciabile per gli amanti del pesce, soprattutto se crudo (i crudi sono talmente freschi che si sciolgono in bocca). I piatti sono preparati con ingredienti freschissimi dalle mani d'oro (frutto di preparazione, esperienza, studio e lavoro) dello chef Domenico Ginevrino, i sapori sono equilibratissimi e la presentazione e' frutto di studio, buon gusto e maestria...a quando la prima stella?! Il servizio è impeccabile e il personale e' accogliente, professionale, attento alle esigenze del cliente e sempre sorridente. La titolare , Annalisa, ti conduce dal primo all' ultimo minuto in un meraviglioso viaggio fatto di sapori, odori e colori. Ti prende per mano e da perfetta padrona di casa, ti guida con cordialita' , professionalita' , simpatia ed eleganza tra le mura di questo raro gioiello che e' Evo..la sua prima e preziosa. Un luogo ideale per chi e' alla ricerca di sapori autentici e raffinati....

Michelin star worthy- a bit pricey maybe but quality of food, ambience and service are impeccable. Went for Easter lunch with a tasting menu - def merits a visit if you are after something different from the way fish is locally served along the Costa...
