Ramen FREE-MEM and Echigo-Marunoya Karaage shop Murasaki Sta. — Restaurant in Chikushino

This is a pretty good ramen shop. Definitely worth coming by to give it as try vs the other major chains. We ordered the regular and the thick soup version (additional scoop of oil )and both are equally very good. The extra oil makes it more aromatic, while for the original, you can taste more pork flavor. Recommend getting the thick soup version . Freshly fried chicken pieces focus on the original chicken flavour, which tastes very good. Assortment of condiments such as fresh garlic, ginger black pepper sesame. Passing by to go to Dazaifu. I didn't know the restaurant, i saw that was a ramen restaurant and the name of the restaurant "Free men" was so funny, so i was like: "let's go try this one.."

And it was the best ramen expriences of my 2023 trip to japan.

They was so nice with us, even if they had only few word in english, that was so nice.

I took the spicy one, it was so delicious, so colorfull and so tasty. I try the karaage, it was so good too!!

スープは安定の美味しさ。 系統は一風堂さん。 そちらがベースにある中で、 出汁感と味をやや強めにした感じ。

チャーシュー単独で言えば、 トップクラスな個人的お気に入り。 低温調理に多分スモークされた、 風味と旨みが絶品。 麺はなめらかな細麺。

訪問するたびに進化していると感じるお店。 今日もすごく楽しみに訪問。

楽しみにしていたスープは、 素晴らしいバランス極まるスープに進化。 香り、風味、口当たり、旨味、後味。 バシッと整った印象。

スープの系統は一風堂さん。 そちらがベースにある中で、 それのバランスの強弱つけながら、 一番良い所を探されていたような、 個人的に感じていた印象。

それがバシッと決まったような、 凛としたスープ。

一風堂の系譜の気配は感じますが、 さらなる高みに登った感じ。 このバランスは、なかなか無いですね。 これは、通っちゃうな。

そして相変わらずチャーシューが素晴らしい。

今日で4回目の訪問でしたが、 毎回進化している気がします。

どこか出汁のような味わいが、 スープの最初と最後に感じます。

一方で、ややトロミ感を感じた口当たりは、 程よい口当たりに変化。

印象てきには、 以前食べた、1回目と2回目の、 ちょうど中間、いいとこ取り。

個人的にはかなり好きな系統。
