One of the greatest ramen shops I’ve been to in japan. Thick, fatty, deliciously porky, perfectly seasoned broth, thick noodles (can be subbed on request), plenty of bean sprouts, delicious chashu, perfect onsen egg. The shop master was polite and welcoming, on top of being amazing at his craft. Think all the things that make a jiro-style ramen good, without the rough atmosphere and offensive portions. If you like tonkotsu, go here, in a hurry.

福岡人なので豚骨以外のラーメンについては深く語れませんが、豚骨ラーメン以外で美味しいと感じた数少ないお店のひとつです。 出張期間中に二度訪問し 「玉とじトンカツ背脂味噌ラーメン」と 「牛スタ背脂醤油ラーメン」を頂きました。 ラーメン二郎が「二郎」と言う食べ物だとしたら、これは「喰うかい」て言う食べ物だと思います。 味噌も醤油も背脂と融合した特濃なスープが縮れた太い平打ち麺に絡み口の中でガツンと拡がります。 トンカツのカツは薄いがソースがかけてあるのか味が濃く、スープに浸かっていてもフヤケません。 他方で牛スタの牛は意外にアッサリ目の味付けでスープの味によく合っていて、牛の旨味とともにどんどん食べ進みます。 いずれも濃いスープに慣れてきたあたりに背脂を絡めると再びガツンとヤラレて良いアクセントになり、完成度が高いなぁと感じました。 夜の訪問でワンオペでしたが、見かけによらず(失礼な表現で申し訳ありません)素直な感じで慌てず丁寧な対応も好印象でした。 【追記】 醤油ラーメンも頂きました。 スープは少しだけ魚粉系の薫りがして背脂も少し入っていて、ガッツリ系なこちらのお店の中では１番ライトなものかも知れません。
