The highlight at Buta39 is the two different kinds of chashu available. A thin smoky juicy lightly cooked chasu which I liked best, and a thick soft long cooked pork belly chashu. Most customers around seemed to order the pork belly. The overall ramen is Jiro-like in appearance, but tastes quite different. The noodles are thick and chewy Jiro-like noodles, and you order like Jiro, amount of oil, garlic, vegetables and soy sauce. For me the Chashu was better than Jiro and Jiro-like places. The soup less so, not as strong and penetrating taste, but still pretty good. I will go back, especially for the Chashu. The ordering is a bit difficult and confusing. Read moreThe ramen didn't impress me, it is jiro style, but nothing really stands out, the bean sprouts have no flavor, and the soup doesn't really stick to it. The noodles are more spongy than I had hoped, ask for hard noodles if you can. The charsiu is ok, it looks better than it tastes.
Now the curry. That brings this from a 2 to a 4. That curry was amazing. Not what I had expected from a jiro style ramen restaurant, but...
