Trattoria San Vito is an Italian restaurant with a farm-to-table dining experience. The building, the former Nishimura residence, is a remodeled historic home that's over 100 years old.
The chef sources local, seasonal ingredients to craft incredible course meals. Frequently in Japan I see "Italian" cuisine with heavy Japanese influence, but this is the real deal. The chef tells me he trained for several years in Italy.

The ingredients were unbelievably fresh and all from around the region. Food was so deceptively simple but so good.
