馳走 とし藤 — Restaurant in Kusatsu

Call it luck if you will but my friends and I had the whole place to ourselves. It was on a weekday and we were informed that it was unusual that only one table (ours) was taken. The chef looks young to me and apparently traversed around the country honing his skills, including a 10 year apprenticeship in Kyoto before settling in the city of Kusatsu in Shiga prefecture. The dashi broths he used were rich and full bodied and every dish he placed in front of us was different in taste and texture. I thoroughly enjoyed his cooking skills but my 2 lady friends who hail from Kyoto said they prefer flavours that are more delicate than robust. Nevertheless, they did agree that the food was good. The omakase meal came with dessert. You can choose all that is offered to you or just a couple. And, if you order sake by the glass, the chef will pair them with the meal. You can, of course, just choose a sake you like. Service was excellent and if you understand Japanese, the chef will explain his dishes to you. He doesn't seem to be able to speak much English but he will definitely try to communicate with you. He's a very friendly and polite guy. I enjoyed every dish except for one dessert which in my opinion, fell rather flat compared to the others. It consisted of very finely ground red beans into a finely sieved liquid mash which was topped by a spoonful of thick matcha liquid. Flavour wise it was ok but it fell flat to me because the matcha blended too much with the red bean so in your mouth, you just get a strange tasting liquid. I felt if the red bean was a little less refined and smooth, it would have helped to improve mouth feel and create more interest and perhaps even distinction between the 2 main ingredients.
