Everybody knows the quality differences with beef. I now know that difference with pork! Yamato pork, tonkatsu cutlet! The outer layer so cacklingly crispy it reverberates to the inner ear, giving way to a tender but firm morsel of perfectly cooked meat, every bite coating the palette with a rendered juice so rich and nutty in flavor that one could believe the Yamato pork was fed only cachew nuts. Added with a generous assortment of condiments including a delicious in-house carrot dressing. Poured on top of sliced cabbage and eaten after a bite of tonkatsu, the sweet and sour acidity of the dressing and the fresh zing of green cabbage balancing perfectly with the pork. The seat cushions for floor seating were plumped, so they care about little details. The food was excellent, I enjoyed the katsudon, it had a rich flavor and I appreciated that the rice was seperate. The volume is large, for all dishes, even the miso soup contents are filling. Despite this it didn’t feel overdone and It made me feel like they value customer satisfaction.
