I think I might have done something sacrilegious, that is not getting the regular miso on my first visit here. Since I already got a taste of JunSumi-kei at Junrei, I kinda wanted to try something different and this kimchi variant of miso ramen at Sumire caught my eye. Among the 3 famous shops (Sumire, Junren, and Saimi), I think Sumire serves the oiliest bowl so far. The layer of oil was so thick that it scared me quite a bit seeing it in person. It was hard to get the first sip of the broth without scooping up a copious amount of oil. Nevertheless, I do think that the concept of kimchi in miso ramen works as a spicy version. The crunch that the kimchi provided was quite nice. There was so much kimchi in my bowl that I don't think you even need the menma anymore. I quite like how they basically stir-fried the kimchi and dyed the red chili color directly into the miso broth. Instead of the regular chashu, they also tossed thinly sliced pork into the wok. While the flavor profile worked out, this was also the least impactful bowl of miso I got so far on this Sapporo trip. I think the kimchi pretty much mellowed out the intensity of the miso while barely adding much heat...
