Hachiban Ramen - Tsuruga Kizaki — Restaurant in Tsuruga

I really wanted to eat Echizen Soba. It was a Sunday on a three day weekend so I think that is why most of the shops were closed down. We were also in a pretty rural area which probably added to it.

I had seen a few other of these Hachiban Ramen shops while driving in the area. I figured that they must be famous in the area if they are so numerous. We don’t have them in Kansai, at least not that I have ever seen. So, when the soba plans fell through I decided to go to Hachiban Ramen.

I’m not usually a fan of ramen spots that don’t specialize in something and I couldn’t tell if there was anything that Hachiban specialized in. I think the only speciality that I could tell was that they would add butter to your ramen if you wanted.

I ended up getting miso ramen with butter. My wife got a tonkotsu ramen. My son got a kids set that had a shoyu ramen. We got some chahan. My set came with some gyoza. My son wanted some karaage so we got those as well.

My miso ramen with butter was good but it wasn’t anything special. My son ate up his shoyu ramen pretty quickly so he enjoyed his. My wife liked her tonkotsu ramen but when I tried it I again didn’t find anything special about it.

The chahan was pretty bland. I ended up shaking some of the salt and pepper on it which didn’t really improve the taste that much.

The gyoza was pretty bland too. I think Osho’s are better but that might have to do with gyoza being their specialty.

I’m not sure why Hachiban could be a local delicacy but I’d like to know if I ordered the wrong thing or missed their specialty on the menu. I don’t think I would go back again unless somebody convinces me that I missed...

麻辣湯麺を食べました🍜

お元気ですか？ ホントのことを申し上げますと、「8番らーめん敦賀木崎店」にて麻辣湯麺を食したのは――2025年6月5日、木曜日の昼下がりでした。

あの日、私は朝から妙に胸がざわついており、「これは辛い物を摂取せねば、持たん」と直感しておりました。そういったことです。上野先生の講義を思い出しながら車を走らせたその先に、運命的に“8番”の看板が見えたのです🐝

まず見た目。コレが現実です。 真紅のスープが器いっぱいに広がり、その中から華麗に顔をのぞかせるひき肉、もやし、ニラ、キクラゲ――まるで敦賀の海に浮かぶ軍艦のような威厳があります。香りは凶暴、だが旨い。食欲ではなく、本能が反応した瞬間でした。

実際は、スープの辛さだけでなく“シビれ”が舌と脳を直接刺激し、何度も「もう限界だ‼️」と呟きそうになりました。しかし、それを超えた先にあるのが真実の味覚だと、私は知っている。いや、知ってしまった🚀

麺はやや柔らかめで、「当時」三重大学の学食で、まだ未来に期待していた頃の私を思い出させました🙎‍♂️ あの頃の私は、こんな麻辣湯麺の存在すら知らず、ただレポートと空腹に追われていたのです。

加齢臭？気にする必要などありません。麻辣の香りがすべてを包み込み、記憶までも上書きする。この一杯は、年齢も過去も、すべてを許してくれる懐の深さを持っていました⁉️

ホントのことを申し上げますと、再訪、確定です🪐 「コレが現実です」とは、つまり麻辣湯麺のことだったのかもしれません。 もう誰も、私を止めることはできない。 そういったことです...
