I am an Italian who judges Italian food with the severity of a Spanish Inquisitor, and I can say without hyperbole that Pino Rosso, one of the twin Italian-restaurant gems of Tsuwano (the other is Artigiano), is among the finest Italian restaurants in the world. In a time where I can personally attest it is difficult to get actually decent Italian food even in ROME anymore, the sumptuous fare in Pino Rosso only grows more brilliant, more powerful with every visit. It is one of the great ironies of the universe that I have to come once a year to a tiny Japanese mountain village to finally experience some outstanding Italian cuisine. But outstanding barely does it justice. The Red Pine of Pino Rosso, Kenji Akamatsu, can take a handful of ingredients an in 15 minutes prepare a feast that would blind God.
If you find yourself there, I beg you to try the shrimp and cream sauce pasta, which I rate without exception as one of the 5 greatest pastas I've ever eaten in the entire world. It is a symphony. There is nothing left to say of it. It is better not to even speak of it; It will take hold of you, and you will resent it's absence.
The imported prosciutto he lays upon his pizza, like a veil upon an Emperor's bride, was impossibly thin. It was a cotton candy of meat. His bruschetta is perfection, an explosion of flavor on homemade bread of the perfect consistency. The best Italian u can find outside Italy ð®ð¹, or maybe perhaps even better than a lot of true born Italian restaurants themselves.
