Had the Yamagata beef soba after hiking up to Yamadera on what had to be a 90-degree August day, and I really do think it might be one of the best meals I've ever had. This soba restaurant is run by an old couple and has 100% buckwheat soba noodles; meaning that it is gluten free! I have celiacs disease and I ate their Yamagata Beef soba without issue! My partner had Mushroom soba and it might have had some fried ingefients. The meals were very good and the owners are very hospitable. I highly reccomend...

japan soba dashi somehow different much better than Singapore feels natural smooth sweet maybe lots of vegetables not some processed soup base?

beef was fat but sweet & tasty
