If you haven’t seen Netflix’s The Final Table series, see at least one episode before visiting this restaurant. Angel Vazquez didn’t win, but he did win everyone’s hearts and minds with his skills, smile, and demeanor.

Intro is his restaurant in Puebla city in Mexico, near one of the world’s best museums (Museo del Barroca). It’s fitting that his restaurant—one of the best in the world for seafood—would be near a world-class museum.

From the opening complimentary appetizer, a miniature-sized bread with a spread that tastes like sweet potato but somehow is made of something else—I was hooked. I didn’t know yet I was going to have one of the best meals of my life—I just knew my mouth was in love from the first bite. The second plate looked ripe for criticism—a small piece of salmon on a peppered cracker—but once again, my mouth was in love.

My grilled oysters with a kind of buttery sauce were the highlight. The restaurant offers a variety of cuisine, including meat, but I can’t see how any dish could top this one. I’ll be dreaming about Intro’s oysters for weeks to come.

My ceviche was good and much larger than expected. My risotto with quinoa was also lovely, a unique twist on a usually prosaic choice.

You should spend more than one day in Puebla, but if your time is limited, you won’t find a better experience than visiting the Baroque Museum then dining at Intro....

Delightful and memorable, at arrival we were welcomed and served by the most hospitable staff, Somm Gina recommended unique wine, mixologist Sarah recommended a few cocktails and the Manager Eric recommended their tasty in-house-cured olives and explained what special and unrivaled their 5 jotas Jabugo ham was; A product obtained from the rear legs of ibérico pigs raised free range in the meadows of south-west Spain, the only ham that keeps the purity and distinction of its historic ibérico breed.

Our experience was so amazing we came back for Wednesday of #IntroFans for a wine and food pairing class hosted by sommelier Gina De La Mora and Chef Ángel, and let me tell you, we have worked in the wine industry for more than a decade but we learn so much with this dynamic duo, it was so much fun, delicious, lively, unique and very inspiring for my husband and I. UNA DECEPCIÓN TOTAL

Fui a Intro porque leí a un Local Guide Nivel 8, que habló muy bien de la cocina del chef Ángel Vázquez en este restaurante, por lo que estoy totalmente desconcertada del contraste que vivi en experiencia culinaria.

La atención del personal es de lo más atenta, hice reservación para 4 personas, hubo un accidente en la autopista y me iba a demorar sin embargo hable por teléfono y les explique que primero llegarían dos comensales y luego mi hermana y yo (veníamos de CDMX) y fueron muy atentos.

Mi retroalimentación del lugar:

El primer desatino es en el manejo de sus proveedores y alimentos, ya que mi mamá pidió un agua mineral con hielo y pues resulta que el hielo estaba sucio, al comentarle al mesero sólo dijeron que era un problema que ya traían con el proveedor (cámbienlo, los hace quedar muy mal)

Se ordenó:

2 aguas minerales 1 gin and tonic 1 coca cola light

De entrada: Camarones Roca, buen sabor pero nada que sorprenda 6

Platos fuertes: -Sopa de tomate, rica 7, la tostadita es el plus -Ravioles de pato, fallido, me decepcionó totalmente, había partes saladas otras sin sal, el centro frío 5, que lástima! -Róbalo a la leña 7 -Estofado de Cordero Marroqui 6, -Filete 3/4 bastante decepcionante en sabor, le doy un 5, las berenjena sobre cocinada

Lo que si fue un éxito los postres (chocolate y tibio de dulce de leche)

1 Café lungo de nespresso 1 Capuchino

Relación precio - calidad : demasiado caro para lo que ofertan de comida en sabor.

Me entristece, estaba muy emocionada de probar la comida.

RECONOCIMIENTO:

LOS MESEROS SALVAN LO DEMÁS con su esmero en atenderte, porque la cocina lenta lo que le sigue y todos los platillos sin chiste.

QUIERO PENSAR QUE FUE UN MAL DÍA EN LA COCINA

PD. Literal, se les olvidó que ordené Ravioles y ya que todos habían terminado y hasta que me cansé de esperar y pregunté que pasaba, me los trajeron.

Cuenta final $1,853 más propina.

El estacionamiento cuesta 20 pesos las dos primeras horas, el valet...
