Initial thoughts: I had been wanting to try out the food here in AGES and I must say, this was my first time trying authentic ramen and IT ABSOLUTELY WAS DELGHTFUL.🎉
Food: We ordered a bunch of items including Shoyu Ramen, Tan Tan Ramen, Fried rice, and California Roll. This place has EVERYTHING you need in a ramen. The ramen bowls had all five components made to perfection!: Aroma oil ✅ Broth ✅ Handmade ramen noodles ✅ Char shu Pork ✅ Toppings, including fermented eggs ✅
The noodles were SO soft and were perfectly separated from each other. I could certainly feel the hardwork put into it, props to the Japanese chef💪. The broth was warm in temperature and was very rich in umami. The pork was thinly sliced with a nice char and the menma was well fermented😇. The eggs had that fermented taste to it too! However, I did feel my Shoyu Ramen had eggs abit overcooked, but Tan Tan Ramen had the perfect consistency, runny and smooth. You are provided with chilli oils to customize your ramen bowl's taste to your liking👍
The fried rice was well coated with the sauces and did not taste dry at all! The short grain rice was very tasty and went really well with our food choices. The California Roll looked ✨STUNNING✨ and tasted as great. It was available at a very charming price and we couldn't restrain ourselves, totally worth trying!🥰
Ambience: Me and my friends went to have lunch and there were plenty of seats available. We went Thursday noon so the place was quite open. The place is basked in sunlight and so I had a warm and a pleasant time there. The staff that served us there was sooo sweet and jolly, instantly made the visit so much better, a HUGE plus point for me!😊
Complimentary: In addition, we even got complimentary dishes served to us, which was as amazing as the ramen bowls!🥰 The gyoza had perfect fillings with thin dough, with the right amount of crispness to it. Teriyaki chicken and some gomae at the side was a fine touch as well. 😊

Read moreI’ve never met a property like Chimes before, and for that matter, I’ve never stayed at a property like Chimes. It was one of the most uniquely special stays I’ve had on any hotel property, ever. Decorated with smiling staff and smells of fresh food, Chimes is a place for the dreamer and the traveler. Operated by several friends who’ve spent their time in various parts of the world, Shikhar, TJ, and Viking have built the most comfortable restaurant and hotel in Nepal, and its only a matter of time until Chimes’ name is widely known across the globe.
A few things to get out of the way:
The perimeter is safely guarded 24/7 not simply by security staff, but security staff who enjoy what they do and who take real pleasure in working at Chimes
the neighborhood is clean and calm, surrounded with residences and stores that you can buy anything at when need be
a fitness center is a few blocks away, with a great view of the city. There is also a movie theater next door to the gym
the hotel itself is super clean and quiet. Sleeps are nice because no light gets in the room when the curtains shut
staff are available 24/7
clean water and good food is also available 24/7
Shikhar, Viking, and TJ are around and available all the time to ask questions and to hang out with.
When I stayed at Chimes, I arrived after a crummy situation at another hotel. I immediately felt at home, and was welcomed with open arms. As a photographer, Shikhar and the guys held events every night for me to photograph and for others to enjoy, which included nice drinks and a campfire, snacks and music from Ricky, one of the affable staff members and servers.
Shikhar, V, and TJ invited me to speak about photography before some wonderfully kind Nepalese men and woman, and I was so grateful for that.
