A very enjoyable experience for a special occasion. Surprising tastes based on combinations of Dutch produce only. Beautiful delivery with personal intros for each dish by the chef. The dishes are expectedly small and that's quite alright, as this is about teasing your taste buds and the nuance fades away after a few bites. A delightfully intimate family run restaurant. The food was fantastic, with textures and flavours brilliantly showcasing the chefs talent. All the elements were executed perfectly. The chef did come out to speak to us after the meal and it was a lovely personal touch, his passion added to our dinning experience.

Op een zaterdagavond kom ik terecht in het Bussumse restaurant Faulk en dat is echt een mooie verrassing. Faulk is een klein restaurant dat met veel zorg en aandacht ingericht is, Het voelt er warm aan. Subtiel zou je het kunnen noemen en dat geldt ook voor veel van de gerechten. We kiezen voor het 4-gangen menu en dat heeft veel moois te bieden. Faulk weet ook vaak mooie wijn- spijs combinaties te presenteren. Het is niet altijd raak, maar zeker de combinaties met een mooi glas Albarino uit de Spaanse regio Rias Baixas of een Cardonnay uit de Languedoc zijn erg mooi. De ravioli met spinazie, ricotta, pijnboompitten vinaigrette en kaasschuim maakt indruk. Een mooie subtiele combinatie van smaken en structuren. Ook het hoofdgerecht, polderhoen, mag er zijn, al past het glas Kroatische Teran er dan wat minder bij. We sluiten af met een kaasplankje. Faulk is een echte aanrader.
