As we understood, the dishes are selected by the chef on the day, with some signature dishes as standard. We had: sushi (tuna, salmon and halibut), king crab, lobster, scallops, tuna, duck and A5 wagyu beef. Note: crab and lobster didn't require any hard work, the flesh had already been prepared into the dishes, with the shells more there for decoration.
