This place is worth visiting as a landmark of the culinary world. It is necessary to call in advance to make a reservation, though I note that I called at around 11:30am and got a table for 1pm the same day on a Tuesday (and there were 3 tables empty so I don’t think there is much to fret about to get a reservation). It seemed to me that there is a single seating - 1pm - so you should show up then (as opposed to trying to make a reservation for 1:30 or 2). They only take reservations the day before. Upon arrival (it is a discreet location as there is no sign), you are seated and are soon greeted by a friendly waiter who will take your drink order. Chef Wong comes up shortly thereafter. The ceviche was excellent and the best I had in Peru. You can take a picture with him after that course. The next two courses were stir frys with fish. Based on previous Google reviews, it seems that the stir frys change pretty frequently, so you can never be sure what you are getting in advance. You can choose to only have the ceviche (just ask for the bill after it is served) or one or two following courses (the waiter will ask if you want another course). The stir frys we had were certainly very tasty, with a fruity flavour that emerged. They were however quite similar to other stir fry Chinese dishes in North America, so if you are on a tight budget, stopping after the ceviche does make sense. (Though perhaps try at least one of the stir frys for the true fusion environment). The bill is simple - 75 soles per person per course. Given this, the dishes are generally cooked overly salty for my taste, which seems to be often the case for Peruvian food. I definitely have had better cerviche than this, and so did some other patrons whom I spoke to while there. The fish is really fresh though. And for the second cooked fish dish, it was done really well. That is, tender white meat, which definitely requires master-level skills to achieve such perfection over a fire. Efectivamente no hay carta como algunos comentaban, por lo tanto uno no tiene la mas minima idea de lo que va a invertir (pero yo ya estaba preparado gracias a google maps y los comenzales que dejaron su opinión). Comenzaré diciendo que el mozo no atendia bien, lo mas probable era que se sentia bastante presionado al ser el único que atiende y debia de tratar de complacer a todos, aunque dudando si realmente eso era importante para el Chef. No me preguntaron si frio o caliente; solo si deseaba ceviche. Me dijo el mozo, es de pulpo con pescado, le dije que yo queria solo de pescado (lenguado). Me dijo qie iba a ver y dedafortunadamente vi que le cayó 'un café' por parte del Chef; pero si me trajeron ceviche solo de pescado (unos 180gr) aderezado con bastante pimienta, limón y sal, no pude saborear si habia otro ingrediente. Estaba agradable el jugo del ceviche. Para beber solo ofrecieron gaseosa o cerveza. Ni canchita ni acompañante alguno. Al terminar, quise probar lo caliente, le pregunté que había, ahi entendí la dinamica del restaurante, eran platos al wok a base de pescado. Cuando le pregunté qué prepararian: "son creaciones del momento del Chef", me dijo el mozo bastante aburrido supongo porque ya está temeroso de refutar al Chef y sabe que no tiene sentido intentarlo. En otras palabras, lo que en ese momento le de la gana de preparar al Chef, eso hay. Le dije, bueno para probar, sin tanto animo. Para ser honesto me gustó ese saltado de lenguado a término medio con pocas verduras y hongos chinos, en un aderezo sabor oriental. Terminé mi gaseosa y creo era suficiente por la experiencia. Y debo ser totalmente transparente, precio del ceviche 75 soles (bastante alto), precio del saltado casi la misma cantidad 150 soles. Al pagar todavia me preguntaron si deseaba agregar la propina.
