We are a sucker for anything 'x Best' so Metiz was definitely in our radar to check out since they were a part of Asia's 50 Best Restaurants. Overall, happy with the 8-course menu and the price point (Php4,850/person). Would definitely recommend to those who'd want to experience Filipino fine dining.

Since we ate at Toyo Eatery last year when we visited home and both are in Asia's 50 Best, it was inevitable we'd compare both. in terms of overall taste, we enjoyed the food at Metiz slightly better. I emphasize 'slightly' since it wasn't significantly better. Toyo Eatery seemed more 'value for the money' since they had more courses and extras in between meals when the price for both I think was either the same or not significantly higher than the other we liked how Toyo Eatery explained where almost each and every ingredient came from, i.e. the salt was from x, the rice from y and so on. Metiz did some of that but not consistently in all dishes and just for maybe one or two ingredients in the dish. Toyo Eatery had slightly better service since Metiz did not clean up our table like a used paper towel was still there until the end of the meal and hey I know this sounds nitpicky but you charge those prices and want to be called fine dining, well, these things are basic the meal ended with Toyo Eatery sending us home with a house made pastry while Metiz gave us a shot of flavored lambanog which we did like and... Choc-Nut. I think if they ended with just the lambanog, it would be somewhat at par with Toyo's house made pastry but the addition of Choc-Nut kinda put me off. Choc-Nut is something I can easily buy anywhere and it's off the shelf. Again, you want to be fine dining, I expected you doing your own version of Choc-Nut.

If you can do so, definitely try both Metiz and Toyo but if you had to choose one or you're deciding which one to eat at first, I recommend doing...

Anticipation and excitement filled the air as I planned my last day in Manila, choosing a venue that had garnered high praise to make our final moments in the city truly memorable. The allure of what was promised to be an exquisite dining experience had us looking forward to a culinary adventure. However, my expectations, perhaps tinged with a bit of wanderlust and a high bar for culinary delight, were not entirely met.

While the dishes were presented with care, they found themselves comfortably in the realm of adequacy rather than soaring to the extraordinary heights I had envisioned. The flavor profiles did not ascend to the levels of excellence I anticipated.

Adding to the sense of unmet expectations was the pacing of the meal. For an eight-course adventure, the experience felt surprisingly rushed, compressing what should ideally be a leisurely three-hour dining experience into a tighter schedule. This pace detracted from the ability to truly savor each course, to revel in the flavors, and to appreciate the culinary narrative unfolding with each dish.

Despite these aspects, it's important to acknowledge the high points of our visit. The service provided by the staff was commendable, with their attentiveness, professionalism, and warmth adding a layer of satisfaction to our experience.

Sep 26 Update from 1 to 3 stars: This issue has been resolved. Owner/executive chef, Stephan, took full accountability for both the safety lapse and the handling failures. He offered a sincere apology and provided an appropriate resolution.

I was shocked to find a small metal shard in my dish (tuna dish part of the isda, sabaw , kanin course) during dinner today. I immediately showed it to the chef, but instead of receiving an apology or any reassurance, the incident was brushed off without acknowledgment.

What made this worse was the lack of responsibility shown. I chose not to escalate it further at the time since it’s my sister’s birthday and I didn’t want to ruin the night, but that doesn’t make the situation any less unacceptable. Food safety should always come first, and basic courtesy would have gone a long way.

For a restaurant ranked among Asia’s Top 50, this was deeply disappointing. Accidents can happen, but ignoring them and leaving a guest feeling dismissed is not the standard I expected. I sincerely hope management addresses this properly, both in terms of guest safety and making amends for the experience.

Sep 24 update: Management reached out to my sister, who made the reservation, but not to me — the guest who actually found the metal shard, reported it, and was the one in danger of ingesting it. That feels dismissive, since the issue happened directly to me. Nothing feels...

Tofu, fermented pineapple, beach lettuce, lacto vegetables, sourdough lumpia, fresh leaves. Caramelized Ensaimada, Kalim-Aw kamote, cheese and soured milk, aged tapuy reduction, kasuy. Potato, bruised mostasa and garlic sawsawan, corn and dehydrated oysters, pork, preserved batuan. Aged tanigue, fermented rice and mushrooms condiment, red rice sauce, compressed talinum sawsawan. Aged Zambales pork, pork and clam sauce, kalabasa flowers, fermented carrot ketchup. & Smoked cured egg yolk and crab fat emulsion, fried rice. Fermented langka, melon and panutsa gel, toasted sesame milk. Banana leaf cake, rice in different forms, fresh and fermented white bean. Cocktail HIRAYA “Make your dreams come true” Black Rice & Cashew Nuts Horchata, Blended Rum, Fino Sherry, Pineapple Juice, Lime Shrub Muscovado Syrup Cashew Milk Foam 500+
